Sour Cream Coffee Cake

Are you looking for a cake for your morning coffee or an afternoon tea snack? Well, this tasty Sour Cream Coffee Cake is a perfect cake for it! It’s sweet,nutty and has that cinnamon aroma and taste to it! My mouth is watering right now as I’m typing this by the way.

Prep time for this cake is about 30 mins (more or less) depending how fast you are; baking time is about 60-75 minutes and cooling it down is about an hour or so BUT it so worth it!

So Let’s get started!

Ingredients:

  • 2 sticks of butter
  • 2 cups of sugar
  • 2 eggs, beaten
  • 2 cups sour cream
  • 1 tablespoon of vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon of salt
  • 1 tablespoon ground cinnamon
  • 2 cups of chopped pecans or walnuts

Directions:

First, preheat oven to 350 degrees.

Grease or coat the bundt pan with butter and lightly dust the inside with flour

In a large bowl, cream or mix the butter and sugar together. Add beaten eggs in the creamed sugar then add sour cream and vanilla extract. Once everything’s all mixed together, set it aside

In a separate bowl, sift together flour,baking powder and salt

Next, fold the dry ingredients into the creamed mixture. Please do not over beat. Once all mixed in, set it aside (see photo below).

Now lets make the fillings/toppings! In another separate bowl, mix together: sugar,cinnamon and pecans or walnuts (see photo below).

Prepping is now done! Time to put them into the bundt pan (photo below)

Pour half of the creamed mixture in the pan and sprinkle with half of the cinnamon pecan/walnut.

Then pour the remaining creamed mixture and topped with the remaining cinnamon pecan/walnut. It should look like on the photo below.

Now it’s baking time! Bake it for 60-75 minutes or until it’s done.

When it’s done, remove the pan/cake from the oven and let it cool for about an hour .

Loosening the edges by using a knife to easily take the cake out of the bundt pan (see video below).

Next, cover it with a cake stand (or a plate) and turn it upside down to transfer/remove the cake from the pan (see video below)

 

And there you have it! You just made your own Sour Cream coffee cake! Bon Appettite!
