It’s Chicken Adobo time! I don’t really cook Filipino food around the house. That’s because my mom cooks. She cooks anything Filipino/Asian all the time and maybe that’s why I cook something non-Filipino food for a change.
So one day I told my mom that I should start learning how to cook Filipino food in case if I have a family of my own (I’m not getting younger you know. I have to know these stuff).
Chicken Adobo is one of Filipinos’ famous dishes. It has simple ingredients and it’s oh so flavorful!
Be sure you have LOTS of hot rice to eat it with.
- 1/4 cup Cooking Oil
- about 2-3 lbs. Chicken (I used prepackaged chicken drumsticks)
- 3-4 cloves minced garlic
- 3-4 pieces of Bay Leaves
- 1-2 tablespoon Black Pepper
- 1/2 cup Soy Sauce
- 1 cup white Vinegar or Apple Cider
Heat cooking oil in a large frying pan.
Fry the chicken for about 10 to 15 minutes each side or until golden brown.
Add garlic and continue to fry for about 2-3 minutes.
Add Bay Leaves,black pepper,soy sauce and vinegar and bring it to boil.
Once it starts boiling,cover and let it simmer for about 30 minutes or until the liquid evaporates and turn to an oily like sauce.
Serve with hot rice and enjoy!
