Here’s a Quick and Easy Chicken Noodle Soup recipe for you to try at home. This is a perfect meal for this cold gloomy day, it’s good for the body and even better for the soul. No wonder why this is one of the most cooked meals during winter season, a comfort food indeed! This also works well for those who don’t have the time to make soup totally from scratch. Some of the ingredients I used are ready to use or frozen. Total cook and prep time is about 30 minutes.
So let’s get started!
- 1 tablespoon butter
- 1 medium onion,chopped
- 1 quart chicken broth
- 2 chicken breasts, cooked and chopped
- about a cup of frozen vegetables
- 1 1/2 cup egg noodles
- 1/2 teaspoon Italian seasoning
- salt and pepper to taste
In a large pot, melt butter on medium heat. Cook onion in butter until translucent (about 5 mins).
Add Chicken broth and stir in frozen vegetables,chicken,egg noodles and Italian seasoning.
Bring to boil, then reduce heat and simmer for about 15-20 minutes. Add Salt and Pepper to taste. Stir and serve!
