I’ve been feeling motivated and productive ever since I decided to take a break / limit my time from the social media world. I was able to catch up on my reading; magazines and books I’ve been meaning to read since last year and projects such as cooking,cleaning and organizing that I’ve been putting off for months. I’m slowly getting myself back again. The less time I spend online, the more I’m getting stuff done.
Anyways, yesterday I wanted to make something quick and easy to get my creative juices flowing so I made this Fresh Mozzarella and Cherry Tomato Salad. It’s quick,easy and healthy.
What you’ll need:
- 1/4 lbs. Mozzarella cheese (cut into cubes)
- 1 cup Cherry Tomatoes ( sliced in half)
- 1 cup torn or sliced Basil Leaves
- 1-2 tablespoons Olive Oil
- 3-4 tablespoons Balsamic Vinegar (about 4-5
- Salt (to taste)
- Pepper (to taste)
- pinch of Garlic Powder
In a large bowl, combine mozzarella cheese,tomato and basil and drizzle with olive oil and balsamic vinegar then add salt,pepper and garlic powder. Stir lightly. Chill the salad in the refrigerator for about an hour before serving. (Optional: You can also add croutons on top before eating to add crunchiness.)
