I know it’s been a while since my last recipe post, I’ve been busy with life lately;Work,traveling,Zumba and catching up with friends. I also started using Snapchat. My friend introduced my about it and at first I didn’t know what I was doing, I was so freaking confused! It’s totally different from other social media. It took me a while to finally get it and my friends send me snaps so I can get used it. Now I think I’m hooked! I use snapchat regularly now, I snap about the latest things that’s happening in my life and some of my foodie adventures, it’s actually fun! I am so excited to get my cooking mojo back and share some of my favorite recipes. Now that we’re really close to the holiday seasons, I’ve been reading cookbooks and other food and art magazines to get some ideas and to feel inspired again.
This Chicken with Sautéed Mushroom recipe is really easy! I found this recipe from one of Martha Stewart’s cookbooks and I kind of change a few things that suites my taste so here’s the recipe:
- 1/4 cup all-purpose flour
- about 1 1/2 lbs. boneless chicken breast (or chicken cutlets)
- 1 tablespoons of Olive Oil
- 3 tablespoons of butter
- 2 tablespoons chopped thyme leaves
- 1 package (or 1 lb.) of sliced mushrooms
- 1/4 cup white wine
- 1/4 cup chicken broth
- 1/4 cup chopped parsley leaves
- salt and pepper to taste
Season chicken with salt and pepper and dredge in flour in a shallow place, shake off excess.
heat oil and 1 tablespoon of butter in a large skillet over medium-high heat, cook chicken until browned and cooked through (about 2-3 mins each side). Transfer chicken to a plate, cover it with aluminum foil to keep warm then set aside.
Reduce the heat to medium then add the remaining 2 tablespoons of butter and mushrooms. Cook until softens (about 5 mins). Add white wine and Chicken broth,continue stirring until liquid is reduced by half (about 2-3 mins). Add the cooked chicken in to the pan then add parsley. Add salt and pepper to taste. Serve!
