Chicken Barley Soup

Since I’m doing a lifestyle change, I am also changing my eating habits; eating healthy for a better version of me! And because I love my readers (Yes, You!) I’d like to share with you my healthy eating journey by posting recipes and tips for you to try at home.

This Chicken Barley Soup is like a whole meal in a bowl. It’s super easy to make! I love the texture and the aroma of the soup especially the ginger scent and flavor. It’s soothes my throat and my tummy. I had this when I was sick and It was just a great comfort food. I love it!


  • 1 1/2 cup chopped carrots
  • 1 large onion chopped
  • 1 quart chicken broth
  • 5 chicken legs
  • 3 tablespoons grated or minced ginger
  • 3 cloves garlic minced
  • 1/2 cup barley
  • Italian seasoning (optional)

Combine all the ingredients in a large pot. Bring it to boil and simmer it, covered, stirring occasionally for about 45 minutes.

Then simmer it uncovered, stirring occasionally for about 30 minutes.

Transfer chicken legs using tongs to a plate and let it cool until it can be handled. Remove the skin and bones (you only need the meat) and add the chicken meat to the pot. Turn off heat. Add salt and pepper to taste and serve!
Viola! You just made a healthy dish!
